Preparation of Filling

Make the Filling
In a mixing bowl, combine the canned tuna, canned spicy crab meat, cream cheese, Sriracha sauce, and chopped green onions. Mix well until all ingredients are thoroughly combined.

Prepare the Jalapeños
Cut the tops off the jalapeños and carefully remove the seeds and membranes using a small spoon or knife. Be careful not to break the jalapeños.

Stuff the Jalapeños
Using a small spoon or piping bag, fill each jalapeño with the prepared filling, pressing down gently to pack it in.

Set Up Breading Station
In three separate bowls, place the all-purpose flour, beaten eggs, and panko breadcrumbs.

Bread the Jalapeños
Dip each stuffed jalapeño in flour, ensuring it's coated evenly. Next, dip it in the beaten eggs, and finally coat it with panko breadcrumbs, pressing gently to adhere.

Heat Oil and Fry
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Carefully add the breaded jalapeños in batches, frying until golden brown and crispy, about 3-4 minutes per side.

Drain and Cool
Using a slotted spoon, remove the fried jalapeños from the oil and place them on a plate lined with paper towels to drain excess oil.
