Prepare Sushi Rice

1. Rinse the Rice

In a fine mesh strainer, rinse the sushi rice under cold water until the water runs clear. This removes excess starch.

2. Cook the Rice

In a medium saucepan, combine the rinsed rice and water. Bring to a boil over high heat, then reduce the heat to low, cover, and simmer for about 20 minutes or until the water is absorbed. Remove from heat and let it sit, covered, for an additional 10 minutes.

3. Season the Rice

In a small bowl, mix together rice vinegar, sugar, and salt until dissolved. Transfer the cooked rice to a large bowl and drizzle the vinegar mixture over the rice. Gently fold the rice with a wooden spatula to combine. Allow it to cool to room temperature.

4. Prepare the Tuna

Dice the fresh tuna into small cubes.

5. Mix the Ingredients

In a medium bowl, combine diced tuna, mayonnaise, Sriracha sauce, chopped green onions, and sesame oil. Mix until well combined.

Assemble the Rolls

Place a bamboo sushi mat on a clean surface and lay a sheet of nori, shiny side down.

7. Layer the Rice

Wet your hands to prevent sticking, then take a handful of sushi rice and spread it evenly over the nori, leaving a 1-inch border at the top.

8. Add the Filling

Place a line of the spicy tuna filling across the center of the rice.

9. Roll the Sushi

Using the bamboo mat, carefully roll the nori away from you, tucking the filling in tightly as you go. Roll until you reach the border, then wet the edge of the nori to seal the roll.

10. Slice and Serve

Using a sharp knife, slice the roll into 6-8 pieces. Serve with soy sauce, pickled ginger, and wasabi on the side.
