Preparing Sushi Rice

Rinse the Rice
Place the sushi rice in a fine-mesh sieve and rinse under cold water until the water runs clear, about 2-3 minutes.

In a medium saucepan, combine the rinsed sushi rice and water. Bring to a boil over medium-high heat, then reduce to low, cover, and simmer for 18-20 minutes until the rice is tender and the water is absorbed.

Once the rice is cooked, remove from heat and let it sit covered for 10 minutes. In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Fold this mixture into the rice gently, using a wooden spatula.

Spread the rice onto a large plate or tray to cool to room temperature, about 15-20 minutes.
