Preparing Sushi Rice

    Rinse the Rice

    Place the sushi rice in a fine-mesh sieve and rinse under cold water until the water runs clear, about 2-3 minutes.

    Cook the Rice

    In a medium saucepan, combine the rinsed sushi rice and water. Bring to a boil over medium-high heat, then reduce to low, cover, and simmer for 18-20 minutes until the rice is tender and the water is absorbed.

    Season the Rice

    Once the rice is cooked, remove from heat and let it sit covered for 10 minutes. In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Fold this mixture into the rice gently, using a wooden spatula.

    Cool the Rice

    Spread the rice onto a large plate or tray to cool to room temperature, about 15-20 minutes.

Preparing Shrimp

    Cook the Shrimp

    In a skillet, heat a small amount of oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant. Add shrimp, lemon juice, salt, and black pepper. Cook for 3-4 minutes until shrimp are pink and opaque.

    Remove the cooked shrimp from the skillet and let them cool slightly before using.

Rolling the Sushi

    Place a bamboo sushi mat on a clean surface and lay a sheet of nori on top, shiny side down.

    Wet your hands to prevent sticking, then take a handful of sushi rice and spread it evenly over the nori, leaving a 1-inch border at the top.

    Place a few pieces of cooked shrimp, avocado slices, and cucumber slices in a line across the middle of the rice.

    Roll the Sushi

    Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to form a tight roll. Seal the edge with a little water.

    Using a sharp knife, slice the roll into 6-8 pieces. Repeat with the remaining nori sheets and filling.
