Prepare Sushi Rice

Place the sushi rice in a fine mesh strainer and rinse under cold water until the water runs clear. This removes excess starch.

In a medium saucepan, combine the rinsed sushi rice and water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 20 minutes or until the water is absorbed.

Remove the rice from heat and let it sit, covered, for 10 minutes. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the rice using a wooden spatula.

Ensure the salmon fillet is skinless and bones are removed. Cut into thin strips.

Lay a sheet of nori on a bamboo sushi mat, shiny side down.
