Method

Prepare the Shrimp

    Clean the Shrimp

    Rinse the rock shrimp under cold water and pat dry with paper towels.

    Season the Shrimp

    In a bowl, season the cleaned rock shrimp with salt and black pepper. Set aside.

Make the Tempura Batter

    Mix Dry Ingredients

    In a large bowl, whisk together the all-purpose flour, cornstarch, and baking powder.

    Add Ice Water

    Gradually add the ice water to the dry ingredients, stirring gently until just combined. Avoid overmixing.

    Heat the Oil

    In a deep pot or fryer, heat vegetable oil to 350°F (175°C).

Fry the Shrimp

    Coat the Shrimp

    Dip each seasoned rock shrimp into the tempura batter, letting excess batter drip off.

    Fry the Shrimp

    Carefully place the battered shrimp into the hot oil in batches, frying until golden brown, about 2-3 minutes. Remove with a slotted spoon and drain on paper towels.

Prepare the Spicy Dressing

    In a small bowl, combine mayonnaise, Sriracha sauce, soy sauce, lime juice, sesame oil, and chopped cilantro. Mix well.

    Chop green onions and set aside for garnish.

    Arrange the fried rock shrimp on a serving platter.
