Preparing the Marinade

Make the Marinade
In a mixing bowl, combine soy sauce, rice vinegar, brown sugar, minced garlic, grated ginger, five-spice powder, and salt. Whisk until the sugar is dissolved and the marinade is well mixed.

Marinate the Pork
Place the pork belly in a large resealable bag or a shallow dish and pour the marinade over it. Ensure the pork is well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours or overnight for best results.
Cooking the Pork Belly

Cook the Pork Belly
Preheat your oven to 150°C (300°F). Remove the pork belly from the marinade and place it in a baking dish. Reserve the marinade. Cover the dish with aluminum foil and bake for 2 hours. After 2 hours, remove the foil, pour the reserved marinade over the pork, and increase the oven temperature to 200°C (400°F). Bake for an additional 30 minutes or until the skin is crispy.

Steam the Bao Buns
While the pork is cooking, steam the bao buns according to the package instructions or until they are fluffy and warm. This usually takes about 10 minutes.

Assemble the Bao
Once the pork belly is cooked and the bao buns are ready, slice the pork belly into bite-sized pieces. Take one bao bun, spread about 1 tablespoon of mayonnaise inside, add a lettuce leaf, and top with the sliced pork belly. Repeat for the second bao bun.
