Preparation of Noodles

Soak the Rice Noodles
In a large bowl, soak the rice noodles in warm water for about 20-30 minutes, or until they become soft but not mushy. Drain and set aside.
Making the Sauce

Combine Sauce Ingredients
In a small bowl, whisk together the fish sauce, tamarind paste, brown sugar, Sriracha sauce, and lime juice until fully combined. Set aside.
Cooking the Pad Thai

Sauté Shrimp
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the shrimp and cook for about 2-3 minutes, or until they turn pink. Remove the shrimp from the skillet and set aside.

Add Noodles and Sauce
Add the soaked rice noodles to the skillet along with the prepared sauce. Toss everything together to coat the noodles evenly with the sauce.

Combine Ingredients
Add the cooked shrimp, bean sprouts, green onions, and chopped peanuts to the skillet. Stir-fry everything together for an additional 2-3 minutes until heated through.
Serving

Plate and Serve
Transfer the Pad Thai to serving plates and garnish with extra chopped peanuts and lime wedges if desired. Enjoy!
