Scoop and Freeze
Scoop the ice cream of your choice into small balls (about 1-2 tablespoons each) and place them on a baking sheet lined with parchment paper. Freeze the ice cream balls for at least 1-2 hours or until firm.

Microwave the Mixture
Cover the bowl with plastic wrap, leaving a small vent for steam to escape. Microwave the mixture on high for 1 minute, then stir. Repeat this process, microwaving for additional 1-minute intervals, stirring in between, until the dough is translucent and sticky (about 3-4 minutes total).

Dust and Roll
Dust a clean surface with cornstarch. Pour the mochi dough onto the surface and dust the top with more cornstarch. Using a rolling pin, roll the dough to about 1/4 inch thickness. Cut into squares or circles, large enough to wrap around the ice cream balls.

Wrap the Ice Cream
Take a piece of the mochi dough, place a frozen ice cream ball in the center, and carefully fold the edges of the mochi over the ice cream to seal it completely. Make sure there are no gaps.

Place the wrapped mochi ice cream back on the baking sheet and freeze for another 30 minutes to set. Serve immediately or store in an airtight container in the freezer for up to a week.
