Prepare the Oysters
Rinse the fresh oysters under cold water to remove any grit. Pat them dry with a paper towel.

Make Batter
In a mixing bowl, combine the all-purpose flour, cornmeal, paprika, salt, and black pepper. In another bowl, whisk together the buttermilk and egg until well blended.

Coat the Oysters
Dip each oyster into the buttermilk mixture, allowing any excess to drip off, then coat it in the flour mixture, pressing gently to adhere.

Heat the Oil
In a large heavy-bottomed pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C) on a deep-frying thermometer.

Fry the Oysters
Carefully add the coated oysters to the hot oil in batches, frying for about 2-3 minutes or until golden brown. Use a slotted spoon to remove the fried oysters and drain them on paper towels.

Prepare the Rolls
While the oysters are frying, slice the hoagie rolls open lengthwise without cutting all the way through.

Place a generous amount of shredded lettuce on the bottom of each roll. Add a few slices of tomato, followed by 3 fried oysters per roll.

Add Tartar Sauce
Drizzle tartar sauce over the fried oysters and close the rolls gently.
