Preparing the Oysters

Clean the Oysters
Rinse the fresh oysters under cold water to remove any dirt or debris. Pat them dry with a paper towel.

Set Up Breading Station
In three separate shallow bowls, place the all-purpose flour in the first bowl, whisk the eggs and milk together in the second bowl, and place the panko breadcrumbs in the third bowl.

Season the Flour
Add salt and black pepper to the all-purpose flour in the first bowl and mix well.
Frying the Oysters

Heat the Oil
In a deep frying pan or pot, heat the oil over medium-high heat until it reaches 350°F (175°C). You can test if the oil is hot enough by dropping a small piece of bread into it; if it sizzles and turns golden, it's ready.

Bread the Oysters
Take each oyster, dredge it in the seasoned flour, then dip it in the egg mixture, and finally coat it with panko breadcrumbs. Ensure each oyster is evenly coated.

Fry the Oysters
Carefully place the breaded oysters in the hot oil, frying them in batches if necessary to avoid overcrowding. Fry for about 2-3 minutes or until they turn golden brown and crispy.

Drain the Oysters
Using a slotted spoon, remove the fried oysters and place them on a plate lined with paper towels to absorb excess oil.
Making the Special Sauce

Mix the Sauce Ingredients
In a small bowl, combine the mayonnaise, ketchup, Worcestershire sauce, hot sauce, and lemon juice. Mix well until all ingredients are fully blended.
Serving the Dish

Plate the Fried Oysters
Arrange the fried oysters on a serving platter.
