Dough Preparation

Make the Dough
In a large mixing bowl, combine the all-purpose flour and salt. Gradually add water, mixing until the dough comes together. Knead the dough on a floured surface for about 5-7 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.
Pork Filling Preparation

Prepare Pork Filling
In a medium bowl, mix together the ground pork, chopped green onions, minced garlic, grated ginger, soy sauce, sesame oil, salt, and black pepper until well combined. Set aside.
Vegetable Filling Preparation

Prepare Vegetable Filling
In another medium bowl, combine the finely chopped cabbage, grated carrot, chopped mushrooms, green onions, minced garlic, grated ginger, soy sauce, sesame oil, salt, and black pepper. Mix well and set aside.
Dumpling Assembly

Assemble Dumplings
After the dough has rested, divide it into small pieces. Roll each piece into a thin circle. Place about 1 tablespoon of filling (either pork or vegetable) in the center of each circle. Fold the dough over to create a half-moon shape and pinch the edges to seal.
Steaming

Steam the Dumplings
Place the dumplings in a steamer basket lined with parchment paper (to prevent sticking). Steam over boiling water for about 15-20 minutes, or until the dumplings are cooked through. Serve hot with soy sauce or your favorite dipping sauce.
