After marinating, remove the chicken from the refrigerator. In a shallow dish, spread the cornstarch. Take each piece of marinated chicken and coat it evenly with cornstarch, shaking off any excess.

In another shallow dish, place the crushed peanuts. After coating the chicken with cornstarch, press each piece into the crushed peanuts to ensure a good coating.

In a large skillet or wok, heat the vegetable oil over medium-high heat until it shimmers.
