Chicken Marinade

    Cut the chicken breast into bite-sized pieces.

    Make the Marinade

    In a bowl, whisk together soy sauce, peanut butter, brown sugar, minced garlic, grated ginger, curry powder, lime juice, salt, and black pepper.

    Marinate the Chicken

    Add the chicken pieces to the marinade and ensure they are well-coated. Cover and refrigerate for at least 30 minutes, preferably 2-4 hours.

Peanut Sauce

    Combine Ingredients

    In a saucepan, combine peanut butter, coconut milk, soy sauce, brown sugar, lime juice, minced garlic, and red pepper flakes.

    Cook the Sauce

    Heat over medium-low heat, stirring continuously until the mixture is smooth and heated through. Add water to achieve desired consistency.

    Adjust Seasoning

    Taste the sauce and adjust seasoning as necessary. Remove from heat and set aside.

Grilling Chicken Skewers

    Soak wooden skewers in water for at least 30 minutes to prevent burning on the grill.

    Thread the marinated chicken pieces onto the skewers, packing them tightly but not overcrowding.
