Preparation and Cooking

    Preheat the Oven

    Preheat your oven to 325°F (165°C).

    Prepare the Turkey

    Remove the turkey from the fridge and let it sit at room temperature for about 30 minutes. Pat the turkey dry with paper towels.

    Season the Turkey

    Rub the turkey all over with olive oil or melted butter. Season generously with salt and black pepper, both inside and out. Stuff the cavity with quartered onion, chopped carrots, chopped celery, minced garlic, and herbs (rosemary and thyme).

    Roasting

    Place the turkey breast side up on a rack in a roasting pan. Roast the turkey in the preheated oven. Cooking time is about 13 minutes per pound, so for a 20-24 lb turkey, it will take approximately 4 to 5 hours.

    Basting

    Baste the turkey every 30-45 minutes with the drippings from the bottom of the pan to keep it moist.

    Check for Doneness

    Use a meat thermometer to check the internal temperature. The turkey is done when it reaches 165°F (75°C) in the thickest part of the thigh.

    Resting

    Once cooked, remove the turkey from the oven and let it rest for at least 20-30 minutes before carving.
