Prepare the Turkey

Preheat your oven to 325°F (165°C). Remove the giblets from the turkey cavity and pat the turkey dry with paper towels. Rub the turkey with salt, black pepper, and olive oil, making sure to coat the skin evenly.

Make the Dressing

In a large skillet, heat olive oil over medium heat. Add the diced onion, celery, and minced garlic, and sauté until softened, about 5-7 minutes. Stir in the fresh herbs and cook for an additional 2 minutes.

Combine Ingredients

In a large bowl, combine the sautéed vegetables with the bread cubes. Pour in the chicken broth and add the beaten eggs. Mix until well combined and the bread is soaked.

Stuff the Turkey

Loosely stuff the turkey cavity with the dressing mixture. Do not pack it too tightly as it needs room to expand while cooking.

Roast the Turkey

Place the stuffed turkey on a roasting pan and roast in the preheated oven for about 3 to 4 hours, or until the internal temperature reaches 165°F (75°C). Baste the turkey every 30 minutes with its own juices.

Once cooked, remove the turkey from the oven and let it rest for at least 20 minutes before carving. Serve with additional dressing on the side.
