    Prepare the Grits

    In a medium saucepan, bring 4 cups of water to a boil. Add 1 cup of grits and a pinch of salt. Reduce heat to low, cover, and simmer for about 20-25 minutes, stirring occasionally until thickened. Stir in 1 cup of shredded cheddar cheese until melted and smooth.

    Cook the Bacon

    In a large skillet over medium heat, cook the bacon until crispy. Remove the bacon from the skillet and crumble it, leaving the bacon drippings in the skillet.

    Cook the Shrimp

    In the same skillet with the bacon drippings, add 2 tablespoons of butter. Once melted, add minced garlic and cook for about 1 minute until fragrant. Add the shrimp, cajun seasoning, salt, and black pepper. Cook for about 3-5 minutes or until the shrimp turn pink and opaque.

    Combine and Serve

    To serve, spoon the cheesy grits onto plates and top with the sautéed shrimp. Garnish with crumbled bacon and chopped green onions.
