Cooking Instructions

  1. 1

    Prep the Chicken

Preheat your oven to 425°F (220°C). Pat the chicken dry with paper towels and place it in a roasting pan. Rub the chicken all over with olive oil, then season generously with salt and black pepper.

  2. 2

    Add Aromatics

Stuff the cavity of the chicken with minced garlic, rosemary sprigs, and lemon slices. Make sure to distribute the ingredients evenly for maximum flavor.

  3. 3

    Roasting

Pour the chicken broth into the bottom of the roasting pan. Place the chicken in the oven and roast for about 1 hour 15 minutes, or until the internal temperature reaches 165°F (75°C). Baste the chicken with the pan juices halfway through cooking.

  4. 4

    Rest and Serve

Remove the chicken from the oven and let it rest for 10-15 minutes before carving. Serve with the natural au jus from the pan.
