    Prepare the Turkey

    Preheat the oven to 325°F (165°C). Remove the turkey from its packaging, and remove the giblets and neck from the cavity. Pat the turkey dry with paper towels. Rub the turkey all over with olive oil, and season generously with salt and black pepper.

    Make the Cornbread Dressing

    In a large skillet, melt the butter over medium heat. Add diced celery and onion, cooking until softened, about 5 minutes. In a large bowl, combine cornbread crumbs, sautéed vegetables, chicken broth, sage, and thyme. Mix until well combined and season with salt and pepper to taste.

    Stuff the Turkey

    Loosely stuff the turkey cavity with the cornbread dressing. Do not pack tightly. Tie the legs together with kitchen twine and tuck the wings under the body.

    Roast the Turkey

    Place the turkey breast-side up in a roasting pan. Roast in the preheated oven for about 3 hours, or until the internal temperature reaches 165°F (74°C). Baste the turkey with its own juices every hour.

    Rest and Serve

    Once the turkey is done, remove it from the oven and let it rest for at least 30 minutes before carving. Serve with the remaining cornbread dressing and gravy.
