Frying the Oysters

    Prepare the Oysters

    Rinse the fresh Gulf oysters under cold water, then carefully shuck them, discarding the top shell. Place the oysters on a plate and set aside.

    Make the Coating

    In a shallow bowl, combine the flour, cornmeal, salt, black pepper, and cayenne pepper. Mix well.

    Prepare the Egg Wash

    In another bowl, whisk together the eggs and milk until well combined.

    Coat the Oysters

    Dip each oyster into the egg wash, allowing excess to drip off, then dredge in the flour-cornmeal mixture, ensuring they are well-coated.

    Heat the Oil

    In a large, deep skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Oysters

    Carefully place the coated oysters in the hot oil in batches, making sure not to overcrowd the pan. Fry for 2-3 minutes on each side or until golden brown and crispy.

    Drain and Serve

    Remove the fried oysters with a slotted spoon and drain on paper towels. Serve hot with your favorite dipping sauce.
