Preparation and Cooking

Prepare the Potatoes

Boil the potatoes in salted water until fork-tender. Drain and let cool slightly, then peel and mash them until smooth.

Make the Gnocchi Dough

In a bowl, combine the mashed potatoes, flour, egg, and salt. Mix until a soft dough forms. If the dough is too sticky, add more flour as needed.

Shape the Gnocchi

Divide the dough into smaller portions and roll each into a long rope, about 1/2 inch thick. Cut the rope into 1-inch pieces. You can shape the gnocchi by pressing them against a fork for ridges.

Cook the Gnocchi

Bring a large pot of salted water to a boil. Drop the gnocchi into the boiling water in batches. They are ready when they float to the surface, usually within 2-3 minutes. Remove with a slotted spoon.

Prepare the Carrot Filetto

In a pan, heat olive oil over medium heat. Add the chopped carrot and sauté until tender. Stir in fresh oregano and cook for another minute.

Combine and Serve

Add the cooked gnocchi to the pan with the carrot filetto. Toss to combine. Serve hot, topped with grated Parmesan cheese and chopped Serrano peppers to taste.
