    Cut the Potatoes

    Wash and peel the russet potatoes. Cut them into even strips, approximately 1/4 inch wide.

    Soak the Potatoes

    Place the cut fries into a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

Cooking

    Heat the Oil

    In a large, heavy-bottomed pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Dry the Potatoes

    After soaking, drain the fries and pat them dry with paper towels to remove excess moisture.

    Carefully add the dried potato strips into the hot oil in batches. Fry for 5-7 minutes or until they are golden brown and crispy. Remove them with a slotted spoon and drain on paper towels.
