Pasta Preparation

    Make the Pasta Dough

    In a large mixing bowl, combine 2 cups of all-purpose flour and 1 tsp of salt. Create a well in the center and crack in 3 large eggs. Using a fork, beat the eggs gently, gradually incorporating the flour from the edges of the well until a shaggy dough forms.

    Knead the Dough

    Transfer the dough onto a floured surface. Knead the dough for about 8-10 minutes until it becomes smooth and elastic. Wrap the dough in plastic wrap and let it rest for at least 30 minutes.

    Roll and Cut the Pasta

    After resting, cut the dough into quarters. Take one piece and keep the others covered. Roll out the dough using a pasta machine or a rolling pin until it reaches your desired thickness (about 1/16 inch). Cut the rolled dough into thin strips to form tajarin (approximately 1/4 inch wide). Dust the cut pasta with flour to prevent sticking.

Truffle Sauce Preparation

    Prepare the Sauce

    In a skillet, melt 4 tablespoons of unsalted butter over medium heat. Add 2 minced garlic cloves and sauté for 1-2 minutes until fragrant but not browned.

    Add Heavy Cream

    Pour in 0.5 cups of heavy cream and bring to a gentle simmer. Let it cook for about 3-4 minutes, allowing the sauce to thicken slightly.

    Incorporate Truffle and Cheese

    Finely shave or grate 0.5 oz of fresh black truffle and add it to the sauce along with 0.5 cups of grated Parmigiano Reggiano cheese. Stir until the cheese has melted and the sauce is well combined. Season with black pepper to taste.

Combine and Serve

    Cook the Pasta

    Bring a large pot of salted water to a boil. Add the hand-cut tajarin and cook for about 2-3 minutes, or until they float to the surface and are al dente.

    Toss with Sauce

    Drain the pasta, reserving a little pasta water. Add the cooked pasta to the skillet with the truffle sauce. Toss gently to coat the pasta, adding reserved pasta water as needed to achieve the desired consistency.

    Serve

    Plate the truffle tajarin, garnishing with additional Parmigiano Reggiano and shaved truffle if desired. Enjoy your gourmet dish!
