Prepare the Fruits
Begin by peeling and chopping all the fruits into bite-sized pieces. For the pineapple, carefully cut off the top and bottom, then slice off the skin and chop the flesh. For the mango, slice the flesh away from the pit and dice it. Peel the kiwis and cut them into rounds or quarters. Peel and slice the bananas. For the papaya, cut it in half, remove the seeds, and scoop out the flesh. Finally, crack open the coconut and scoop out the flesh for use.

In a small bowl, whisk together the honey and lime juice until well combined. Chop the mint leaves finely and add them to the mixture. Stir until the dressing is smooth and the mint is evenly distributed.

In a large mixing bowl, combine all the prepared fruit pieces. Drizzle the honey-lime dressing over the fruit and gently toss to coat all the pieces evenly. Be careful not to mash the fruits.
