Method
Preparing the Fries
- 1
Cutting the Potatoes
Wash and peel the russet potatoes. Cut each potato into thin strips, about 1/4 inch thick, to create fries.
- 2
Soaking the Fries
Place the cut fries in a large bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and makes for crispier fries.
- 3
Drying the Fries
After soaking, drain the fries and pat them dry with paper towels to remove any excess moisture.
Frying the Fries
- 4
Heating the Oil
In a deep fryer or large heavy-bottomed pot, heat the vegetable oil to 350°F (175°C). Use a thermometer to check the temperature.
- 5
Frying the Fries
Carefully add a batch of fries to the hot oil, making sure not to overcrowd the pot. Fry for about 5-7 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels. Season with salt immediately.
- 6
Repeat
Continue frying the remaining batches of fries, maintaining the oil temperature.
Finishing Touches
- 7
Seasoning the Fries
In a large bowl, toss the hot fries with the togarashi seasoning, consisting of shichimi togarashi, sesame seeds, and crumbled nori.
- 8
Adding Truffle Oil
Drizzle the truffle oil over the seasoned fries and toss gently to coat evenly.
