Preparation of Bone Marrow

1. Preheat the Smoker

Preheat your smoker to a temperature of 225°F (107°C).

2. Prepare the Bone Marrow

Rinse the bone marrow bones under cold water and pat them dry. Score the ends of the bones with a knife to help release the marrow while cooking.

3. Season the Bones

Season the marrow bones generously with sea salt and freshly cracked black pepper.

4. Smoke the Bones

Place the seasoned bone marrow bones in the smoker and smoke for about 1 hour, or until the marrow is soft and has pulled away from the bones.

Preparation of Nori & Uni Butter Gremolata

5. Prepare the Butter Mixture

In a medium bowl, soften the unsalted butter at room temperature until creamy.

6. Add Ingredients

Chop the nori sheets finely and add them to the softened butter along with the uni, lemon zest, and chopped parsley.

7. Combine Well

Mix all the ingredients thoroughly until well combined. Season with additional sea salt if needed. Refrigerate until ready to use.

Preparation of Grilled Baguette

8. Slice the Baguette

Slice the baguette into 1-inch thick pieces.

9. Grill the Baguette

Grill the sliced baguette on medium heat for about 2-3 minutes on each side or until golden brown and crispy.

Serving

10. Serve the Smoked Bone Marrow

Remove the smoked bone marrow from the smoker and let it cool slightly. Serve with the nori & uni butter gremolata spread over the grilled baguette slices.
