Steak Preparation

Marinate the Skirt Steak
Season the skirt steak with salt and black pepper. Let it marinate for at least 30 minutes at room temperature.

Cook the Eggs
In a non-stick skillet, cook the eggs to your desired doneness (sunny-side up, over-easy, scrambled, etc.). Season with salt and pepper.
Hollandaise Sauce Preparation

Melt the Butter
In a small saucepan, melt the unsalted butter over low heat until it is completely liquid.

Whisk the Egg Yolks
In a heatproof bowl, whisk together the egg yolks, lemon juice, and salt until the mixture is pale and thick.

Combine and Whisk
Place the bowl over a pot of simmering water (double boiler). Slowly drizzle in the melted butter while whisking constantly until the sauce is thick and creamy. Add a pinch of cayenne pepper and mix well.
