Method

Preparing the Bone Marrow

    Preheat the Oven

    Preheat your oven to 450°F (232°C).

    Prepare the Bones

    Place the beef bone marrow bones upright in a roasting pan. Drizzle with olive oil and sprinkle with sea salt and black pepper.

    Roast the Bones

    Roast in the preheated oven for 15-20 minutes, or until the marrow is bubbling and browned on top.

Making the Parsley Salad

    Chop the Ingredients

    Finely chop the fresh parsley leaves and slice the red onion thinly.

    Combine the Salad

    In a bowl, combine the chopped parsley and sliced red onion. Add lemon juice, olive oil, salt, and black pepper to taste. Toss well to combine.

Toasting the Bread

    Slice the Bread

    Slice the baguette or crusty bread into 1-inch thick pieces.

    Butter and Toast

    Spread butter on one side of each slice and place on a baking sheet. Toast in the oven for 5-7 minutes, or until golden brown.

Serving

    Plate the Dish

    Once the bone marrow is roasted, remove from the oven. Serve the bones immediately with the parsley salad and toasted bread on the side.
