Beef Cheek Preparation

    Sear the Beef Cheek

    In a large pot, heat olive oil over medium-high heat. Season the Angus beef cheeks with salt and black pepper. Sear the beef cheeks on all sides until browned, about 5-7 minutes. Remove from pot and set aside.

    Sauté the Vegetables

    In the same pot, add chopped onion, carrot, and celery. Sauté until softened, about 5 minutes. Add minced garlic and cook for an additional minute.

    Deglaze the Pot

    Pour in the red wine and scrape the bottom of the pot to release any browned bits. Bring to a simmer and reduce by half.

    Braise the Beef

    Return the beef cheeks to the pot. Add beef stock, thyme, and bay leaf. Bring to a boil, then reduce heat to low, cover, and simmer for 3-4 hours until the beef is tender.

Potato Puree Preparation

    Boil the Potatoes

    In a large pot, add the cubed potatoes and cover with cold water. Bring to a boil and cook until tender, about 15-20 minutes. Drain well.

    Make the Puree

    Return the drained potatoes to the pot. Add butter and heavy cream. Mash until smooth and creamy. Season with salt to taste.

Braised Leeks Preparation

    Cook the Leeks

    In a skillet, melt butter over medium heat. Add sliced leeks and sauté until softened, about 5 minutes.

    Braise the Leeks

    Add vegetable stock to the skillet. Cover and simmer for about 15 minutes until the leeks are tender. Season with salt to taste.
