Preparation

  1. 1

    Heat the Milk

Pour 4 cups of low-fat milk into a saucepan and heat it over medium heat until it reaches about 180°F (82°C). Stir occasionally to prevent the milk from scorching on the bottom.

  2. 2

    Cool the Milk

Remove the saucepan from the heat and let the milk cool down to about 110°F (43°C). You can use a thermometer to check the temperature.

  3. 3

    Prepare the Yogurt Starter

In a small bowl, mix 1 cup of plain yogurt with a few tablespoons of the cooled milk. Stir well to combine and create a smooth mixture.

  4. 4

    Combine the Mixtures

Once the milk has cooled to 110°F, pour the yogurt mixture into the saucepan with the rest of the milk. Stir gently to combine everything thoroughly.

  5. 5

    Incubate the Yogurt

Cover the saucepan with a lid or a clean kitchen towel. Place it in a warm spot (like an oven with the light on, or a yogurt maker) and let it sit undisturbed for 6 to 12 hours. The longer it sits, the thicker and tangier the yogurt will become.

  6. 6

    Check the Yogurt

After the incubation period, check the yogurt. It should be thickened and have a slightly tangy flavor. If it’s not thick enough, let it sit for a few more hours.

  7. 7

    Chill the Yogurt

Once the yogurt has reached your desired consistency, transfer it to a clean container and refrigerate for at least 2 hours before serving. This will help it firm up even more.

  8. 8

    Serve

After chilling, your plain low-fat Greek yogurt is ready to serve. Enjoy it plain, or add your favorite fruits, honey, or nuts for flavor.
