Method
Preparation
Start by gathering all the ingredients and tools you will need: a shucking knife, a bowl for the ice, and a serving platter.
Fill a large bowl with crushed ice, enough to create a thick layer that will hold the oysters upright.
Rinse the fresh oysters under cold water to remove any dirt or sand. Scrub the shells gently with a brush if necessary.
Using the shucking knife, carefully open each oyster by inserting the knife into the hinge of the shell and twisting to pop it open. Be cautious of the sharp edges.
Once opened, detach the oyster from the shell using the knife, but leave it in the bottom shell for serving.
Serving
Arrange Oysters on Ice
Place the oyster shells upright on the bed of crushed ice to keep them stable and chilled.
Add Garnishes
Serve the oysters with lemon wedges, a dollop of fresh horseradish, and a small bowl of cocktail sauce on the side.
Flavoring
Provide Tabasco sauce for guests to add to their oysters according to their personal taste.
