Cooking the Pasta

Boil the Pasta
Bring a large pot of salted water to a boil. Add the orecchiette pasta and cook according to package instructions until al dente, usually about 8-10 minutes.

Drain the Pasta
Once cooked, reserve about 1 cup of the pasta cooking water and then drain the pasta in a colander. Do not rinse.
Making the Sauce

Mix Lemon Sauce
In a large mixing bowl, combine the Meyer lemon juice, Meyer lemon zest, and extra virgin olive oil. Mix well until combined.

Combine Pasta and Sauce
Add the drained orecchiette to the bowl with the sauce and toss to coat the pasta evenly. If the pasta seems dry, add reserved pasta water a little at a time until desired consistency is reached.

Add Finishing Touches
Stir in the cracked black pepper, grated Parmesan cheese, and chopped fresh parsley. Toss again until everything is well combined.
Serving

Plate and Serve
Serve the orecchiette warm, garnished with additional Parmesan cheese and cracked pepper if desired.
