Preparation of Salmon

Prepare the Salmon
Season the Ora King salmon fillets with salt and black pepper on both sides. Set aside to marinate for about 15 minutes.

Cook the Salmon
Heat a non-stick skillet over medium-high heat. Add a tablespoon of oil and place the salmon fillets skin-side down. Cook for about 4-5 minutes until the skin is crispy, then flip and cook for another 3-4 minutes or until cooked to your liking.

Prepare the Crab
If using whole Alaskan king crab, carefully crack the shells and remove the meat. If using pre-cooked crab meat, simply set it aside for plating.

Prepare the Potatoes
Peel the Yukon Gold potatoes and cut them into equal-sized pieces, approximately 2 inches each.

Cook the Potatoes
In a pot, melt the unsalted butter over medium heat. Add the potato pieces and cook for about 5 minutes until they start to brown. Pour in the chicken stock, cover, and let simmer for 20-25 minutes until tender.

Finish the Potatoes
Once cooked, drain the potatoes and keep warm.

Make the Fresno-Lime Butter
In a small saucepan, melt the unsalted butter over low heat. Finely chop the Fresno chili peppers and add them to the melted butter along with lime juice, salt, and black pepper. Stir to combine and let it simmer gently for 5 minutes.
