Mochi Dough Preparation

    Mix Ingredients

    In a large mixing bowl, combine the sweet rice flour, sugar, and water. Stir until the mixture is smooth and there are no lumps.

    Steam the Mixture

    Transfer the mixture to a heatproof dish that fits into a steamer. Steam over boiling water for about 20 minutes, stirring halfway through, until the dough becomes sticky and translucent.

    Cool the Dough

    Once cooked, remove the dish from the steamer and let it cool for about 10 minutes. Dust a clean surface with cornstarch to prevent sticking.

    Knead the Dough

    Once cool enough to handle, knead the dough on the cornstarch-dusted surface for a few minutes until smooth.

Filling Preparation

    Prepare Fillings

    In separate bowls, prepare your fillings. For the matcha mochi, mix matcha powder with a little water to form a paste. For mango and passion fruit mochi, ensure the purees are smooth and ready to use.

Assembling the Mochi

    Form Mochi Balls

    Divide the mochi dough into equal pieces, about the size of a golf ball. Flatten each piece in your hand.

    Add Filling

    Place a small spoonful of your chosen filling (matcha paste, mango puree, or passion fruit puree) in the center of the flattened dough.

    Seal the Mochi

    Carefully fold the dough over the filling and pinch to seal, ensuring the filling is completely enclosed.

    Dust and Chill

    Dust the completed mochi balls with cornstarch to prevent sticking. Place them on a plate and refrigerate for at least 30 minutes to firm up.
