In another bowl, whisk together the milk, egg, vanilla extract, and melted butter until well combined.

Combining Ingredients

  1. 3

    Combine Wet and Dry Mixtures

Pour the wet ingredients into the dry ingredients. Stir gently until just combined. If you're making chocolate chip pancakes, fold in the chocolate chips at this stage.

Cooking the Pancakes

  1. 4

    Heat the Griddle

Preheat a non-stick skillet or griddle over medium heat. Lightly grease with cooking spray or a little melted butter.

  2. 5

    Cook the Pancakes

Pour small amounts of batter (about 2 tablespoons) onto the hot skillet. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 1-2 minutes until golden brown.

Serving

  1. 6

    Serve Hot

Serve the mini pancakes hot, topped with Vermont maple syrup and fresh berries of your choice.
