Dough Preparation

Activate Yeast
In a small bowl, combine warm water and active dry yeast. Let it sit for about 5-10 minutes until frothy.

Mix Dough
In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and add the activated yeast mixture and olive oil. Mix until a rough dough forms.

Knead Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.

First Rise
Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Prepare Sauce
In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant. Add the San Marzano tomatoes, dried oregano, salt, and black pepper. Let it simmer for about 15-20 minutes until slightly thickened. Mash the tomatoes with a spoon for a smoother sauce, if desired.

Preheat Oven
Preheat your oven to 475°F (245°C) or as high as it will go to achieve a crispy crust.

Shape Dough
Once the dough has risen, punch it down and transfer it to a floured surface. Divide the dough into two equal pieces. Shape each piece into a rectangular shape (pinsa) about 1/2 inch thick.

Add Sauce and Toppings
Spread a generous amount of the San Marzano tomato sauce over each dough rectangle. Top with sliced heirloom tomatoes and tear the burrata cheese into pieces, placing it evenly over the sauce.

Bake
Transfer the assembled pinsa onto a baking sheet or pizza stone. Bake for 12-15 minutes or until the crust is golden brown and the cheese is bubbly.

Garnish and Serve
Remove from the oven and garnish with fresh basil leaves and a drizzle of balsamic reduction. Cut into slices and serve warm.
