Cheesecake Mousse

    Prepare the Gelatin

    In a small bowl, sprinkle gelatin powder over cold water and let it bloom for about 5 minutes.

    Mix the Cream Cheese

    In a large mixing bowl, beat the cream cheese and granulated sugar together until smooth and creamy.

    Add Vanilla and Gelatin

    Microwave the bloomed gelatin for about 10 seconds until dissolved, then mix it into the cream cheese mixture along with the vanilla extract.

    Whip the Cream

    In a separate bowl, whip the heavy cream until stiff peaks form.

    Fold the Cream

    Gently fold the whipped cream into the cream cheese mixture until fully combined.

    Chill

    Cover and refrigerate the mousse for at least 2 hours to set.

Guava Gelée

    Prepare the Gelatin

    In a small bowl, combine gelatin powder with cold water and allow it to sit for 5 minutes to bloom.

    Heat the Guava Juice

    In a small saucepan, heat the guava juice and sugar over medium heat until the sugar dissolves.

    Combine and Cool

    Remove from heat, stir in the bloomed gelatin until fully dissolved, then let it cool slightly.

    Pour the guava mixture into a shallow dish and refrigerate until set, about 1-2 hours.

Guava Coulis

    In a blender, combine guava pulp, sugar, and lemon juice. Blend until smooth.

    If desired, strain the coulis through a fine mesh sieve for a smoother texture.
