    Prepare Avocados

    Cut the avocados in half, remove the pit, and scoop the flesh into a mixing bowl.

    Mash the Avocados

    Using a fork or potato masher, mash the avocado to your desired consistency (smooth or chunky).

    Add Ingredients

    Stir in lime juice, cilantro, red onion, jalapeño, salt, and black pepper until well combined.

    Taste and Adjust

    Taste the guacamole and adjust seasoning if necessary. Set aside.

Toasted Sunflower Seeds

    Toast the Seeds

    In a skillet over medium heat, add sunflower seeds and olive oil. Toast, stirring frequently until they are golden brown, about 5-7 minutes.

    Remove from heat and sprinkle with smoked paprika, garlic powder, and salt. Stir to combine and set aside to cool.

    Preheat your grill or a skillet over medium-high heat.

    Place halved tomatoes, quartered red onion, and halved jalapeño on the grill or skillet. Drizzle with olive oil and sprinkle with salt. Grill for about 3-4 minutes per side, until charred.
