Method

Preparation

  1. 1

    Prepare the Ingredients

Chop the garlic cloves finely. Rinse the Kalamata olives and roughly chop them. Set aside the San Marzano tomatoes, capers, and fresh basil.

Cooking

  1. 2

    Sauté the Garlic

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant, but not browned.

  2. 3

    Add the Tomatoes

Pour in the can of San Marzano tomatoes, breaking them up with a spoon if needed. Stir in the capers and Kalamata olives. Season with red pepper flakes, salt, and black pepper to taste.

  3. 4

    Simmer the Sauce

Bring the sauce to a gentle simmer. Cook for about 10-15 minutes, stirring occasionally, until the sauce thickens slightly.

  4. 5

    Add the Eggs

Using a spoon, make small wells in the sauce and crack the eggs into each well. Cover the skillet with a lid and cook for about 5-7 minutes, or until the eggs are set to your liking.

  5. 6

    Finish and Serve

Once the eggs are cooked, remove the skillet from heat. Sprinkle freshly chopped basil over the dish and serve hot, with crusty bread on the side.
