Soak the Potatoes
Place the cut potato strips in a bowl of cold water and let them soak for at least 30 minutes. This will help remove excess starch and result in crispier fries.

Heat the Oil
In a large heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Potatoes
Remove the soaked potatoes from the water and pat them dry with paper towels. Carefully add a batch of the fries to the hot oil and fry for about 4-5 minutes, or until golden brown and crispy. Use a slotted spoon to remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil.

Season the Fries
While the fries are still hot, sprinkle them with salt to taste. Repeat the frying process with any remaining potato strips.
Black Truffle Aioli

Combine Ingredients
In a medium bowl, combine the mayonnaise, minced garlic, black truffle oil, fresh lemon juice, salt, and freshly ground black pepper.

Mix the Aioli
Using a whisk or a fork, mix all the ingredients together until well combined and smooth. Taste and adjust seasoning if necessary.

Chill
Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld together.
