Caviar Preparation

Serving Components

Method

Caviar Preparation

  1. 1

    Prepare the Base

In a small bowl, mix the crème fraîche with lemon zest and finely chopped chives. This will be the base for your caviar.

  2. 2

    Chill the Caviar

Place the Petrossian caviar in a chilled serving bowl. Keep it refrigerated until ready to serve.

Serving Components

  1. 3

    Prepare the Blini

If using store-bought blini, warm them gently in a pan or in the oven. If making from scratch, follow your preferred blini recipe.

  2. 4

    Chop the Red Onion

Finely chop the red onion and set aside in a small dish.

  3. 5

    Prepare the Capers

Rinse the capers under cold water and drain them before placing them in a small serving dish.

  4. 6

    Prepare the Hard-Boiled Eggs

Hard boil the eggs, cool them in ice water, peel, and chop them finely. Place in a small bowl.

Assembly

  1. 7

    Plate the Dish

On a large serving platter, arrange the warmed blini. Top each blini with a dollop of the crème fraîche mixture, followed by a small spoonful of the Petrossian caviar.

  2. 8

    Garnish

Sprinkle the chopped hard-boiled eggs, red onion, and capers over the top for added flavor and garnish.

  3. 9

    Serve

Serve the dish immediately with lemon wedges on the side for guests to squeeze over their blinis as desired.
