Caviar Preparation

Prepare the Base
In a small bowl, mix the crème fraîche with lemon zest and finely chopped chives. This will be the base for your caviar.

Chill the Caviar
Place the Petrossian caviar in a chilled serving bowl. Keep it refrigerated until ready to serve.

Prepare the Blini
If using store-bought blini, warm them gently in a pan or in the oven. If making from scratch, follow your preferred blini recipe.

Chop the Red Onion
Finely chop the red onion and set aside in a small dish.

Prepare the Capers
Rinse the capers under cold water and drain them before placing them in a small serving dish.

Prepare the Hard-Boiled Eggs
Hard boil the eggs, cool them in ice water, peel, and chop them finely. Place in a small bowl.

Plate the Dish
On a large serving platter, arrange the warmed blini. Top each blini with a dollop of the crème fraîche mixture, followed by a small spoonful of the Petrossian caviar.
