Method

Cake

  1. 1

    Prepare the Oven

Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.

  2. 2

    Mix Dry Ingredients

In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.

  3. 3

    Combine Wet Ingredients

In another bowl, whisk together the eggs, milk, vegetable oil, and vanilla extract until well combined.

  4. 4

    Combine Mixtures

Pour the wet ingredients into the dry ingredients and mix until just combined. Gradually add the boiling water and stir until the batter is smooth.

  5. 5

    Bake the Cake

Divide the batter evenly between the prepared cake pans and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

  6. 6

    Cool the Cakes

Once baked, remove the cakes from the oven and allow them to cool in the pans for 10 minutes. Then, transfer them to a wire rack to cool completely.

Ganache

  1. 7

    Prepare the Ganache

While the cakes are cooling, chop the dark chocolate into small pieces and place it in a heatproof bowl.

  2. 8

    Heat the Cream

In a small saucepan, heat the heavy cream over medium heat until it just starts to simmer.

  3. 9

    Combine Chocolate and Cream

Pour the hot cream over the chopped chocolate and let it sit for 2-3 minutes to melt the chocolate.

  4. 10

    Mix the Ganache

Whisk the mixture until it is smooth and glossy. Allow the ganache to cool slightly before using.

Whipped Cream Topping

  1. 11

    Whip the Cream

In a mixing bowl, add the heavy cream, powdered sugar, and vanilla extract.

  2. 12

    Beat Until Stiff Peaks

Using an electric mixer, beat the mixture on medium-high speed until stiff peaks form.

Assemble the Cake

  1. 13

    Layer the Cake

Once the cakes are completely cooled, place one layer on a serving plate. Spread a layer of ganache on top.

  2. 14

    Top with Second Layer

Place the second layer on top and cover the entire cake with the remaining ganache.

  3. 15

    Add Whipped Cream

Pipe or spread the whipped cream on top of the ganache.

  4. 16

    Garnish with Berries

Decorate the top of the cake with fresh berries. Serve immediately or refrigerate until ready to serve.
