Method
Hummus Preparation

Confit the Garlic
In a small saucepan, combine the garlic cloves and olive oil. Heat on low for about 30 minutes, until the garlic is soft and fragrant. Remove from heat and let cool.

Prepare Hummus Base
In a food processor, combine the chickpeas, tahini, lemon juice, ground cumin, salt, and cooled confit garlic with oil. Blend until smooth.

Adjust Consistency
Add water gradually while blending to reach your desired consistency for the hummus.

Add Feta
Fold in the crumbled feta cheese gently into the hummus after blending.
Pita Preparation

Activate Yeast
In a small bowl, mix warm water with active dry yeast and let it sit for about 5 minutes until frothy.

Make Dough
In a large bowl, combine all-purpose flour and salt. Make a well in the center, and add the yeast mixture and olive oil. Mix until a dough forms.

Knead Dough
Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth.

Let Rise
Place the dough in a greased bowl, cover it with a cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Shape Pita
Preheat the oven to 475°F (245°C). Divide the dough into small balls and roll each ball into a circle. Place on a baking sheet.

Bake Pita
Bake in the preheated oven for about 5-7 minutes until puffy and lightly golden.
Crudités Preparation

Prepare Vegetables
Wash and slice the cucumber, carrots, and bell pepper. Arrange on a serving platter with cherry tomatoes.
Marinated Olives Preparation

Marinate Olives
In a bowl, combine mixed olives with olive oil, fresh herbs, and lemon zest. Stir well and let sit for at least 15 minutes before serving.
