Method

Cake Preparation

  1. 1

    Melt Chocolate and Butter

In a microwave-safe bowl, combine the unsweetened chocolate and unsalted butter. Microwave in 30-second intervals, stirring after each interval until completely melted and smooth.

  2. 2

    Mix Dry Ingredients

In a separate bowl, sift together the powdered sugar, all-purpose flour, and salt.

  3. 3

    Combine Mixtures

Once the chocolate and butter mixture has cooled slightly, whisk in the powdered sugar mixture until well combined.

  4. 4

    Add Eggs and Vanilla

Add the large eggs, egg yolks, and vanilla extract to the chocolate mixture and whisk until smooth.

  5. 5

    Prepare Ramekins

Preheat the oven to 425°F (220°C). Grease four ramekins with butter and dust with flour to prevent sticking.

  6. 6

    Fill Ramekins

Pour the batter evenly into the prepared ramekins, filling them about 3/4 full.

  7. 7

    Bake

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is soft.

  8. 8

    Cool Slightly

Remove the ramekins from the oven and let them cool for about 1 minute.

  9. 9

    Serve

Carefully invert each ramekin onto a plate. Serve immediately with a scoop of vanilla ice cream on the side, and garnish with chocolate shavings if desired.
