Method

Preparation

  1. 1

    Preheat and prepare ramekins

Preheat your oven to 200°C (390°F). Grease four ramekins with butter and dust with flour to prevent sticking.

  2. 2

    Melt chocolate and butter

In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a pot of simmering water (double boiler method) or in the microwave in short bursts, stirring until smooth. Let it cool slightly.

Batter Mixing

  1. 3

    Whisk eggs and sugar

In a mixing bowl, whisk together the granulated sugar, eggs, and egg yolks until well combined and slightly frothy.

  2. 4

    Combine mixtures

Slowly pour the melted chocolate and butter mixture into the egg and sugar mixture, whisking continuously to combine.

  3. 5

    Add dry ingredients

Sift in the all-purpose flour and add the vanilla extract and a pinch of salt. Gently fold the flour into the mixture until just combined. Be careful not to overmix.

Baking

  1. 6

    Fill ramekins

Evenly distribute the batter among the prepared ramekins, filling them about 2/3 full.

  2. 7

    Bake

Place the ramekins on a baking tray and bake in the preheated oven for 10-12 minutes, or until the edges look set but the centers are still soft.

  3. 8

    Cool and invert

Remove from the oven and let them cool for 1-2 minutes before inverting onto plates.

Serving

  1. 9

    Serve

Dust the warm fondants with powdered sugar. Serve immediately with a scoop of vanilla ice cream and fresh berries on the side.
