Preparation of Seafood

Prepare the Shrimp
In a large pot, bring water to a boil. Add the fresh shrimp and cook for 2-3 minutes until they turn pink. Remove them from the pot and place them in an ice bath to stop the cooking process. Once cooled, peel and devein the shrimp.

Prepare the Crab Meat
If using lump crab meat, gently pick through it to remove any shells. If needed, you may also steam it lightly for 2-3 minutes to warm it up slightly before chilling.

Prepare the Oysters
Shuck the fresh oysters and place them on a bed of crushed ice to keep them chilled until serving.

Prepare the Mussels
In a pot, add water and bring it to a boil. Add the mussels and steam for about 5 minutes or until they open up. Discard any that do not open. After steaming, place them in an ice bath until chilled.

Prepare the Lobster Tails
Boil water in a large pot. Add the lobster tails and cook for about 8-10 minutes. Remove them from the pot and place in an ice bath to cool. Once cooled, slice the lobster tails in half lengthwise.

Arrange the Seafood
On a large serving platter or a tiered seafood tower, arrange the chilled shrimp, crab meat, oysters, mussels, and lobster tails in an appealing manner.

Serve Immediately
Keep the seafood on ice until served to maintain freshness and chill.
