    Prepare the Lemons

    Slice the lemons into quarters, leaving the ends intact to create a hinge. This helps them to hold their shape.

    Cure the Lemons

    In a bowl, mix the kosher salt and sugar. Pack the lemon quarters tightly in a jar, sprinkling salt mixture between layers. Seal the jar and let sit in the fridge for at least 1 week before using.

    Prepare the Chicken

    Season the chicken breasts with salt and black pepper. Dredge them in flour, shaking off excess.

    Coat the Chicken

    In a bowl, whisk the eggs and Parmesan cheese together. Dip the floured chicken into the egg mixture, ensuring they are fully coated.

    Cook the Chicken

    In a large skillet, heat olive oil and 2 tbs of butter over medium heat. Add the chicken and cook for about 4-5 minutes on each side until golden brown and cooked through. Remove chicken and set aside.

    Make the Sauce

    In the same skillet, add garlic and sauté for 1 minute. Pour in the chicken broth and lemon juice, scraping the bottom to deglaze. Return the chicken to the skillet and simmer for 2-3 minutes.

    Add the remaining 2 tbs of butter and chopped parsley to the sauce, swirling to combine. Serve chicken drizzled with sauce.

Potato Purée

    Cook the Potatoes

    In a pot, boil the cubed potatoes in salted water until tender, about 15-20 minutes. Drain well.

    Mash the Potatoes

    In a large bowl, combine the cooked potatoes, butter, and heavy cream. Mash until smooth and creamy. Season with salt and black pepper to taste.
