Prepare the Citrus Pearls

Make Citrus Mixture
In a small saucepan, combine lemon juice, orange juice, and water. Stir well.

Add Agar-Agar
Sprinkle the agar-agar powder over the citrus mixture while stirring. Heat the mixture over medium heat, bringing it to a gentle boil to activate the agar-agar.

Cool and Form Pearls
Once boiling, remove from heat and let cool slightly. Use a dropper to drop the mixture into a bowl of cold oil (or water). This will form small citrus pearls. Let them set for about 10 minutes.
Assemble the Salad

Slice Tomatoes and Strawberries
Wash the heirloom tomatoes and strawberries. Cut the tomatoes into wedges and slice the strawberries.

Plate the Ingredients
On a large plate, arrange the tomato wedges and sliced strawberries. Tear the burrata cheese into pieces and place on top of the salad.

Add Citrus Pearls
Sprinkle the prepared citrus pearls over the salad for a burst of flavor.

Garnish and Season
Tear fresh basil leaves and scatter them over the salad. Drizzle with balsamic glaze, and season with salt and black pepper to taste.
