Brioche French Toast

Prepare the batter
In a medium bowl, whisk together the eggs, milk, vanilla extract, and ground cinnamon until well combined.

Soak the bread
Dip each slice of brioche bread into the egg mixture, allowing it to soak for a few seconds on each side until well coated.

Cook the French toast
In a large skillet, melt 1 tablespoon of butter over medium heat. Add the soaked brioche slices and cook for about 3-4 minutes per side or until golden brown. Repeat with the remaining slices, adding more butter as needed.

Serve
Remove from skillet, drizzle with maple syrup, and serve warm.

Prepare the potatoes
Wash and dice the potatoes into small cubes.

Cook the potatoes
In a large skillet, heat olive oil over medium heat. Add the diced potatoes and season with salt and black pepper. Cook for about 10-15 minutes, stirring occasionally, until the potatoes are golden and crispy.

Garnish and serve
Sprinkle with fresh parsley if desired and serve alongside the French toast.
