For the Blackened Grouper

    Prepare the spice mix

    In a small bowl, combine paprika, cayenne pepper, garlic powder, onion powder, dried thyme, salt, and black pepper.

    Season the grouper

    Rub both sides of the grouper fillets with olive oil and then coat them evenly with the spice mix.

    Cook the grouper

    Heat a cast-iron skillet over medium-high heat. Once hot, add the seasoned grouper fillets and cook for 4-5 minutes on each side, or until the fish is cooked through and has a blackened crust.

For the Cherry Bomb Tartar Sauce

    Mix the sauce

    In a bowl, combine mayonnaise, finely chopped cherry tomatoes, pickles, capers, lemon juice, and fresh dill. Stir until well combined.

    Season the sauce

    Add salt and black pepper to taste. Mix again and refrigerate until ready to use.

For the Sandwich Assembly

    Prepare the buns

    Brush the burger buns with olive oil and grill them on the same skillet used for the grouper until golden brown.

    Assemble the sandwich

    On the bottom half of each bun, layer a lettuce leaf, a blackened grouper fillet, a slice of heirloom tomato, and a generous dollop of cherry bomb tartar sauce. Top with the other half of the bun.
