Preparing the Steak

    Bring the Steak to Room Temperature

    Remove the porterhouse steak from the refrigerator and let it sit at room temperature for about 30 minutes before cooking. This allows for even cooking.

    Generously season both sides of the porterhouse steak with salt and black pepper.

Cooking the Steak

    Preheat the Grill

    Preheat your grill to high heat (about 450°F to 500°F).

    Grill the Steak

    Place the steak on the grill and cook for about 4-5 minutes on one side. Flip it and cook for another 4-5 minutes for medium-rare, or longer if you prefer it well done.

    Remove the steak from the grill and let it rest for at least 10 minutes before slicing. This helps retain the juices.

Making the Salsa Verde

    Prepare the Ingredients

    Finely chop the parsley, basil, garlic, and capers.

    Mix the Salsa Verde

    In a bowl, combine the chopped parsley, basil, garlic, capers, red wine vinegar, salt, and black pepper. Slowly whisk in the olive oil until well combined.

Serving

    Slice the rested porterhouse steak against the grain, serve on a platter, and drizzle the salsa verde over the top.
